Oatmeal. Yes, this is in a Pyrex cup. It’s easier to microwave and the handle doesn’t singe your hand like a bowl would. My oats had pumpkin, chia seeds, coconut butter, maple syrup and almond milk.
Roasted vegetable spring rolls with tofu and avocado. I roasted parsnips, carrots and broccoli. Not sure how I feel about parsnips. I don’t think I like them. It just sounded like a good idea to buy them!
