I think my oven was smoking on Monday night because the bacon spit grease all over the oven and it was that grease that was burning. As you can see, the bacon on the chicken did not burn.
Just a little crispy on the edges, like it should be. 🙂
So, I think if you cover the chicken for the first part of cooking and then uncover it for the last few minutes of cooking, you shouldn’t have the same problem as me. Here’s the recipe for the most delicious and decedent chicken ever!
Bacon Wrapped Chicken Breasts
- 2 chicken breasts
- 4 tbls of herbed goat cheese, or you could buy plain goat cheese and add whatever herbs you want.
- 4 slices of thick cut, apple wood smoked bacon
- 4 toothpicks
Preheat the oven to 350 degrees.
Place your chicken breast between two pieces of parchment paper and pound out to 1/4 inch thick. Use mallet, rolling pin or if you’re really cool like me, a small frying pan to pound the chicken.
Spread two tablespoons of goat cheese of each piece of chicken and then roll up, sealing the cheese in the chicken.
Roll two slices of bacon around each chicken breast and secure with toothpicks.
Place chicken in lightly sprayed cooking vessel (I used a 9×13 Pyrex pan) and cover with foil. Please cover with foil, or after 30ish minutes of baking, you’ll wonder why it smells and looks like there’s a campfire in your kitchen. Bake for 30 minutes.
Bake uncovered in the last five minutes to crisp up the bacon.
